Easy Baked Apples with Honey, Cinnamon and Almonds
Besides my parents occasionally using this blog as a means of checking up on me (Hi Mom!), I’m never sure who else comes here on a regular basis. I get lots of page hits on individual posts, such as my experience taking the Michael’s cake decorating course last spring or a recipe that sounds intriguing (my dairy free blueberry oatmeal muffins has been consistently the most popular).
Therefore, I’m never sure when I should talk about the other, non-baking events that happen in my life. I know that its the personal aspects of a blog is what makes it interesting and keep readers intrigued, but I’m never sure on what level I should be sharing things. Obviously, you have to be careful and I’m not interesting in sharing tons of personal stuff with the internet. At one time, it was dangerous to put a picture of yourself online and now with Facebook and Twitter, its almost the norm. I even remember when my parents were too afraid to use online banking when it first became available and now its the fastest, easiest way to pay our bills.
Now that I think about it though, I should let this one fact about me know. Just in case I start talking about crazy, different things, my readers (hello, anyone out there?) will be able to pin-point the switch-over.
So to make it short, sweet and simple, a couple weeks ago when I talked about going to the Apple Farm for Thanksgiving, I left out one tiny detail. An important question that Trevor asked me.
To say I wasn’t expecting it right then and there was an understatement. We’d always talked about our future and what could lay ahead for us, but I definitely wasn’t expecting the proposal right there on the edge of the Apple Farm, beside a row of trees filled with royal galas, in the bright and blinding sunlight (it was very hot that day).
So now Trevor and I are going to be a future Mr and Mrs! Major emphasis on future though, as we have a lot of things to figure out before try our hand at planning a wedding. Rumour has it those can be pretty stressful, right?
Ha-ha, just so you know, the last wedding I went to was in 2009, so I’m totally out of the loop with how these things work out. My closest friends aren’t even thinking about getting married anytime soon, so I have no real reference of how to plan a wedding at the moment. I read somewhere that our generation is waiting longer and longer to get married and I can definitely see that now. So many things come first, like having a career, saving money, buying a house, getting a dog….no wonder people elope, it gets the whole marriage thing out of the way faster.
I think my family would kill me if I eloped without them.
Anyways, enough pesky marriage talk, lets get back to baking! Speaking of the Apple Farm, we still have a ton of apples left in our fridge from our trip a few weeks ago. They are getting a little soft right now, so my Mom suggested that this is the best time to think up what to bake with them. She still hasn’t sent me her recipe for apple cheddar scones (hint, hint – ha-ha!), but I thought I’d try something easy that Trevor could also enjoy.
Easy Baked Apples with Honey, Cinnamon and Almonds
Ingredients:
- 2 large apples
- 2 tsp cinnamon
- 2 tbsp honey
- Handful of almonds, roughly chopped
Directions:
- Preheat oven to 350*F and place a large piece of foil on a baking sheet for easy clean-up.
- Core the apples and chop into slices – keeping the skin on is optional. Place the apple slices on the foil and dust with cinnamon, honey and chopped almonds.
- Wrap the foil around the apples and bake for 25 minutes until the apples are soft.
- If you desire more sweetness, add maple syrup or brown sugar before baking.

Add a splash of almond milk if you have a lactose intolerant boyfriend husband-to-be! Ha, that will take some time to get used to!

I just tried this recipe…..yummmmm. It came out wonderfully good; quick and easy. It is nice knowing there is a healthy, natural snack that I can make when the cravings for something sweet hit and have it thoroughly satisfied. Thank you for posting.

Thank you for the baked apple recipe, I found you online, it was exactly what I was looking for as I’m attempting to eat more Paleo, trying to stay away from alot of preservatives this was perfect 🙂
I heard aluminium foil is toxic when is directly attached by food. 🙁 , so I am not using any aluminium if possible. Could I prepare in a glass resistant plate for pie in stead of using foil?

I haven’t made this in a while, but you can defiantly try the recipe in an oven-safe dish with a lid. Since the lid would trap the heat, you would just need to reduce the baking time so the apples don’t become mush. Happy baking!

This will be a great beginning of the rest of your lives together. My husband, now gone, proposed to me just weeks having met me thru a matchmaking service which used the mail….Ha–1988. Anyway, we were married 21 years and we were truly best friends and did everything together. There were ups and downs but the journey was still great. So tighten your seatbelts!!
Anyway, I will try this recipe tonight as a “Thanksgiving Leftover” dessert as I received a platter of sliced apples (with caramel) platter for our original dinner. And of course, will use the caramel as well. As my Mom used to say “What could be bad”.
