Easy Vegan Pancakes with Fruit Puree
My favourite meal of the day is breakfast. To me, nothing is more satisfying than sleeping in on the weekend and making a hearty, healthy breakfast.
This is also the perfect recipe for a single or couple, as it only makes about 2 servings. They are so delicious that if it made any more, I’d probably gorge myself and eat them all in one sitting.
Easy Vegan Pancakes
Ingredients:
- 1 cup of flour
- 1 tbsp white sugar
- 1 1/2 tbsp baking powder
- Dash of salt
- 1 cup of water
- 2 tbsp vegetable oil
- 1 tsp cinnamon
- 1/2 tsp nutmeg
Optional items
- blueberries, chopped apple, walnuts, etc
Directions:
- Heat up your pan to medium heat. As it warms up, combine all the ingredients into a bowl and mix well until smooth.
- Add optional fruit if you are planning on doing so.
- Spoon about 1/4 cup of batter onto the heated pan and flip when the batter bubbles in the middle and the edges look tough.

I’m not a big maple syrup fan when it comes to pancakes (strange, I know), so I usually like to spread a small container of fruit yogurt on my stack and pretend its a whipped topping. A couple days ago, I discovered the most wonderful fruit topping from Angela at OhSheGlows.com and I think it compliments this pancake recipe very nicely.
You will need half a banana and a small handful of strawberries. Oh and a food processor to puree two ingredients together.

When they pancakes are ready, chop up a few extra strawberries and start to assemble the stack.
Mmmmm, Aunt Jemima who?
If you have leftover puree, save it in the fridge. It makes the perfect base for smoothies, ice cream sauce or your next batch of pancakes.
Lastly, when enjoying the pancakes, don’t worry about trying to keep the stack together. Pancakes are meant to be a little messy.
