With Christmas only a couple days away, I imagine that most people already have finalized their holiday baking, but I thought I would throw one more recipe in the mix for all the tea lovers out there. It feels really good to be back in the kitchen after a very busy couple of months. The rest of my summer was pretty much a write-off due to pregnancy fatigue, we were away for most of October due to our Italy trip and then I headed off to Ottawa to attend FBC2017. The beginning of November had us driving up to Newmarket for my brother’s wedding and afterward, my parents stayed and visited for an extra couple of days. Mid-November, we finally enjoyed some long-awaited weekends that allowed us to do nothing but sleep-in and catch up on housework and laundry. Now, I can’t believe we’re approaching the last month of the year – seriously, where did 2017 go?

I’m living, breathing and eating ALL the chocolate things right now. I know January is supposed to be all about getting back on track, eating healthy and getting off my couch, but right now I don’t think I could handle seeing another salad. Or another weight loss ad.

I don’t know if it’s the time of year or the lack of sunshine, but I’m currently going through the January blahs. I’ll be having a perfectly normal day, but then I’ll come home and want nothing to do with anything. No TV, no internet, I just want to hold up under a blanket in my bedroom, preferably with one of the chocolate bars I brought back from Mexico. I know this is just one of those weird seasonal things that will pass, but I just hope my current chocolate supply holds out until then.

A couple weeks ago, I discovered the magic powers of dulce de leche. Dulce de leche is a thick, creamy, very addicting caramel spread that is made by heating milk and sugars for several hours. It can be purchased ready-made in grocery stores, but if you are feeling little more domestic, you can also cheat a little by using a can of sweetened condensed milk. There’s a ton of resources on the internet for how to make homemade dulce de leche using condensed milk, so instead, I’m going to share a cookie recipe you can make once you forcibly stop yourself from eating it straight from the jar.

I’m pretty sure this toasted coconut chocolate chip cookie dough fudge is everything I ever wanted in a dessert. As a chocolate-loving adult, it incorporates everything I love – rich milk chocolate, toasted coconut and chocolate chip cookie dough. And if you think you are too old to enjoy cookie dough in all it’s unbaked glory, one bite of this fudge will definitely change your mind.

When I was a teenager, I bought my fair share of homemade chocolate fudge from the local Christmas Market in my little hometown in northern Saskatchewan. As much as I now love living in a big city, I do miss the small-town charm of Christmas Markets filled with friendly neighbors and local vendors. I’ve visited and purchased presents at a couple of the markets in Toronto over the past few years, but sometimes the crowds can be quite suffocating (think crowded, delayed subway – ugh). Thankfully with this recipe, I can get my fix in the comfort of my home and it also gives me the opportunity to enjoy a few pieces and then give the rest away to friends and co-workers.

I feel like a broken record when I talk about how quiet I’ve been here. Lots of baking and cooking has been going on in the background, but nothing blog-worthy or anything that I could call my own until now.

In April, I felt a little burnt out from cooking until we did some major spring cleaning. I went through my cookbook collection, pulled out my favourites and placed them in a high-traffic, visible spot near our couch. The move to the couch has been great because I sometimes get restless when watching TV and flipping through cookbooks are a great alternative to playing mindless games on my iPad. As a result, our meals have had a lot more variety and I actually look forward to spending time in the kitchen again. I highly recommend this method if anyone feels like they are in a rut and don’t know what to make for supper. It’s also been great for planning ahead for breakfasts in the morning and for packing lunches for work.

Trevor and I have a real addiction for peanut butter. We make our own on a semi-regular basis and if you check out my blog archives, you may notice that I have over a dozen peanut butter recipes. There wasn’t a lot of PB goodness in the kitchen when I was a growing up, so I’d like to think that this is just me making up for lost time. So when Food Blogger’s of Canada and Hershey’s Canada were looking for bloggers to take part in the #DoYouSpoon campaign promoting Reese Chocolate Spread, I jumped at the chance. Hello! I was going to start by saying how I can’t believe it’s already June, but we’re actually nearing the end of the second week of the month. Hopefully, the rest of summer slows down. My balcony garden is starting to show some promise (Instagram photo here) and already there’s so much seasonal food I want to stuff my face with. Recently an urban farmer’s market set up shop across the street from our condo building and yesterday I had to resist the urge to purchase multiple baskets of local ruby red strawberries. We have an out of town trip planned for this weekend, part of which involves a visit to my favourite market ever (!!), so I’m trying to make sure the fridge is nice and empty before we leave.

I’m officially over winter.

I know a lot of people say that, but I think today I truly am. It may be because I’m tired of constantly scraping salt off my boots, my work pants and even our hardwood floor. I’ve lost count at how many times I’ve managed to misplace my mitts, hat and scarf at any given moment. And I’m still not too thrilled that it’s dark outside before 6pm.

But it’s almost the end of February and I swear, it’s like a light at the end of the tunnel. Spring is coming.

Whenever there is a fresh blanket of snow outside, I always find myself reaching for comfort food. Lately it’s been casseroles, homemade soup, fresh baked rolls, warm mugs of apple spiced tea and all the baked goodies imaginable. The freezer as of late has become pretty bare because we’ve somehow managed to eat through all the carrot ginger soup and leftover turkey stew I made and promptly froze at the end of December. Luckily with all this soup and stew we’ve been eating, my new bread maker has been getting plenty of use. I’ve become a master of the “dough” setting and turning out fresh rolls like nobody’s business. Hopefully later on in the year I’ll be able to face my fear of making fresh bread on a regular basis and we can stop buying up all the spongy commercial bread at the grocery store across the street (possible goal for 2015?).
