Lemon Chia Seed Pancakes

I didn’t expect to go so long without posting, but here is my first recipe of 2018! The beginning of the year was pretty hectic, what with work, attending prenatal classes at the hospital, and just trying to get everything organized before my leave, and most of all, before our baby’s arrival. I’m now a couple days into my maternity leave and I finally feel like I have a chance to breathe this year.

Hearty Apple and Zucchini Steel Cut Oats

I had every intention of posting something right after I attended the 2016 Food Bloggers of Canada Conference at the end of October, but the universe had other plans. Remember earlier last month when I had a minor cold and then said that I couldn’t remember the last time I was sick? Well touche universe, touche. Right after the conference, I was hit with a horrible bout of the dreaded common cold. To give you an example of how crazy it was, I took a couple sick days from work and my FitBit told me that during one day, I slept off and on for 15 hours. During the weekends, I became the queen of two-hour afternoon naps. At one point, I was even convinced that my stomach was sloshing around from all the tea and hot soup I was consuming. I’m now slowly getting my energy back (a little cough here and there), but it’s still a miracle that Trevor hasn’t caught it (knock on wood, hah).

Easy Overnight Yogurt Chia Seed Breakfast Bowl

Over the years, the most popular post has been my recipe for Easy Yogurt Overnight Oats (thanks, Buzzfeed) and as the temperature continues to go up, it’s easy to see why. They are super easy to make because all the prep is done the night before and you get to wake up to a cold, creamy breakfast that can be dressed up with all the fruit and toppings your heart desires. A definite plus for me because I tend to be very zombie-like first thing in the morning and the window between waking up and leaving for work tends to feel very short.

Lately, I’ve been posting a quick photo of my weekday breakfasts on Snapchat and it’s helped me become a little more creative with what I eat. When I was a teenager, I was perfectly happy with a large bowl of Cheerios or another kind of cereal, but over the last years I’ve discovered that boxed cereal doesn’t fill me up the same way. Right now, I’m really into simple foods with lots of veggies or fruit (hello berry season!) and anything that doesn’t take a lot of time to put together.

Peachy Blueberry Chia Seed Popsicles

For the last couple months, we’ve been planning out our summer road trip around Saskatchewan and Alberta. Now after weeks of last minute change of plans and “where did that reservation email go?” discussions, we’re finally on our way to the airport! Wheee!

If you’ve read my blog, you’ll probably notice that August tends to be our “on the go” month. We were married in August, we bought and moved into our condo the following August and then a few weeks later, we flew to Manchester for a wedding and then traveled to Paris. Basically, it’s almost become a running gag that we save the majority of our vacation days until the end of summer.

Kale Mango Green Smoothie

Is anyone else really pumped about all this melting snow? I swear, after this cold, bitter winter I’m never going to take warm weather for granted again. Of course, I’m saying this now. You may have to remind me of how cold I was when the summer humidity hits and I swear that I’m melting. If anyone knows of a place to live that is constantly spring/fall all year round, sign me up!

To celebrate the warm weather that is hopefully staying, I broke out my new blender and had a green smoothie party. Kale is the star ingredient of this smoothie, but if kale is not your thing you are welcome to use spinach instead. Spinach also has a milder taste and blends smoother than kale so if you are just jumping on the green smoothie bandwagon, I highly recommend spinach as a great starting point.

Grapefruit Chia Seed Muffins

At the end of winter, I always go through a grapefruit-buying phase. I see them on sale at the grocery store and I stock up because I’m convinced they’ll get me through the end of cold season. I used to think that this had something to do with trying to get my daily dose of Vitamin C (see the end of cold season), but now I believe it has more to do with all these beautiful pink, red and yellow hues. I swear, when the winter days are dark, cold and gloomy, there is nothing more satisfying and uplifting than slicing into a ripe, juicy grapefruit.

Chocolate Avocado Protein Smoothie

Like everyone else, the beginning of January is when I kick my healthy eating into high gear. Lately we’ve been eating a lot of salads with our supper (this kale one I posted on Instagram has been on high rotation in our kitchen) and we’ve been making a point to slowly get rid of the leftover candy and chocolate from the holidays. Baby steps is where it’s at, although I’m hoping that I can keep this up through February before the next wave of chocolate hits the shelves. (Although according to Twitter, most stores are ahead of the game!)

The hardest thing I find about eating healthy so quickly after the holidays is trying to get over my persistent chocolate craving. For a good two weeks, I had holiday parties, cookie exchanges, chocolate boxes in the break room at work, and candy in my stocking on Christmas morning. There is still chocolate in our freezer and it’s taking all my willpower not to eat it right this second. I can eat all the kale salad my heart desires, but nothing comes between me and my mint chocolate.

Chewy Oatmeal Energy Bites

Moving is a lot like working in the film industry. For both, the paperwork side is completely insane, there always a lot of people and deadlines to keep track of and by the end of the day, it’s just a big game of hurry up and wait. Our closing date for our new place is August 1st and I swear it’s so close that I can almost taste it. Right now we’re trying to do all the paperwork of organizing our finances, scheduling movers, and transferring our services (internet, etc) to the new location. We’re also in the middle of purging and packing everything. We put in our 60 day notice on our current apartment last week (we’re doing a slow move-in in August) and now that that is finalized, it seems all the more real that we’re actually leaving.

Lemon Chia Seed Cookies

Last week, I found myself in a bit of a baking and blogging rut and at first I blamed it on the weather. With the sun out until almost 9pm every night, the last thing I wanted to do was stand in front of a hot oven or type hunched over my laptop. It also didn’t help either that our apartment oven was acting up again, but the biggest reason was even if I wanted to bake something, I was at a loss for ideas. My to-bake list was uninspiring and for most of last week, just the thought of trying to make something sounded exhausting.

Luckily, this feeling passed. Usually I make a conscious effort to post a recipe or something once a week, but sometimes things come up. Plus I think its good to take a break once in a while rather than try to rush out content that I’m not particularly proud of.

Easy Yogurt Overnight Oats

As an early (not by choice) riser, I’m a big believer in having a good breakfast to start my day. As much as I would love to have a proper sit down breakfast each morning, I’m usually strapped for time. Once I get up, shower, get dressed, pack my lunch and make sure I have everything ready for the day (such as my gym bag for days I hit the gym after work), I usually only have about 10 minutes to make/eat my breakfast and enjoy a cup of coffee before I catch my 7:03am bus (ugh) to the subway station.

Since my morning time is so limited, I’m also a big believer in getting as much ready as I can the night before. I usually get my lunch ready while I’m making supper and I try to pack my gym bag while I’m brushing my teeth. Now that the weather is starting to warm up, I’ve started to re-introduce yogurt overnight oats into my breakfast routine. This saves even more time because all the prep happens the night before and I get to wake up to ready-made, cold and creamy oats that I can decorate with different nuts, fruit and spices. The great thing is that overnight oats are super portable and on days where I’m really running late, they can be made in a mason jar or portable Tupperware container and thrown in my bag with a spoon. A nice, healthy, and cheaper alternative to waiting in line at Tim Horton’s every morning!
