Trevor and I had a mild panic attack over the weekend when we logged into our WeddingWire account and the countdown kindly reminded us that it was 20 days until our wedding.
Ummmmm, say what? Seriously where did all this time go? Did we not just celebrate the 4-month before wedding date yesterday? (Not really, but you get the picture).
For the last couple of months, I’ve been working with the brilliant and talented Lindsay over at Purr Design to help make the scary leap from Blogger to a self-hosted WordPress site. Not only did she transfer every single file and comment, she also helped streamline my recipe index and made my recipes much more printer and user friendly. You can even like, tweet and pin each post! After being stuck with the limitations of Blogger for the last 2 1/2 years, I’m pretty much leaping with joy over the amount of freedom I now have. The popular post listing on the side bar? All Lindsay. The fact that my tweets show up again on the blog? All Lindsay again! (PS: I plan on tweeting more, I promise!)
So have a look around and let me know what to think of the new look. I’m still in the process of formatting each and every of my almost 200 posts, but if anything doesn’t work, feel free to pop me an email or comment.
In the meantime, I have a special recipe to share. Special for you because its delicious and you don’t have to turn on your oven to make it, special for me because it’s part of a fun memory I have with one of my closest friends.
After weeks of off and on hot and cold weather, I believe it’s finally safe to say that it is officially summer in Toronto. There have been a few days of scorching temperatures and some heat advisory warnings that make me grateful to know that I get to spend the majority of my days in my air-conditioned office building. Our apartment doesn’t have such luxuries, but we did recently purchase a fancy stand-up fan that has been making the living room bearable.
With the return of summer, this also means that the kitchen oven will be off for the time being. For suppers, we’ve been relying a bit more on our slow cooker and have really taken to slow-cooked chicken. On one particular day, the chicken smelled so fantastic that I broke my oven-off rule and made these savoury salted rosemary buns. I’m such a rebel.
This week, I bring you….mini fruit pizza cookies! And I can already hear the murmurs through the crowd: “So wait, is this a mini fruit pizza or is it a cookie?”
It’s been a few days since we made and enjoyed them and I’m still trying to figure this out. When they taste this good, it’s best not to ask trivial questions.
The simplest way to describe these as a plain cookie slathered in cream cheese icing and covered in sliced fruit. Like a fruit pizza, only in nice individual sized portions that you don’t have to slice. Everyone gets their own cookie (or two or three) and they are super portable to take to a party where you can just put them on the table and you won’t have to worry about asking for a plate and utensils.
Dark chocolate and peanut butter. Has there ever been such a wonderful combination?
I know that it doesn’t quite hold a candle to my ultimate favourite combination (chocolate and mint), but this one is a close second. Especially when made in cute little cookies that are the perfect size to be dipped in a glass of almond milk and enjoyed after a long week.
